These have been very well-known operators doing this, and they argued that their name is bringing in the customers and without the customers there are no tips. Seems to me these people are bottom feeders and I don't want to go to a restaurant where I know this is happening. <br /><br />One additional comment... I think there are some smaller owner-operator restaurants in which the chef-owner makes a point of interacting with the customers. We used to go to one near our old place. He would recognize us and stop by to say hi, and occasionally bring us an after-dinner drink. In this case, I think it was the nature of the smaller operation.
